Sweet Potato Souffle Recipe 

I know you guys know I love NIÑA’S KITCHEN so, in honor of tomorrow, I thought I’d share the recipe for….

….THE BEST SWEET POTATO SOUFFLE EVER….

Okay, in the interest of being a bit more politically correct (just for good measure), lets restate the above statement – In my opinion it’s the Best Sweet Potato Souffle EVER.  

I do apologize in advance for coming off pompous but I have never, ever, ever…”foreva’ eva’?” Yes “foreva’ eva'”…tried a Sweet Potato Souffle as good as this recipe.  

So, without forever adieu, NIÑA’S KITCHEN Sweet Potato Souffle Recipe (i.e., THE BEST SWEET POTATO SOUFFLE EVER).

The Best Sweet Potato Souffle Recipe

A cherished family recipe for the holidays…So easy and DELICIOUS! It can even be prepared the night before and baked right before serving.

INGREDIENTS

4 c. mashed sweet potato (if using canned potatoes/yams, make sure to drain them well)

1 c. granulated sugar

3 eggs

1 stick butter, melted

3/4 c. sweetened, flaked coconut

1 tsp. vanilla

Topping

1 c. brown sugar

1/2 c. flour

1c. chopped pecans

DIRECTIONS

1.Preheat your oven to 350 deg. F.

2. In a large bowl, mix the mashed sweet potatoes with the sugar.  Next, add 3 eggs, one at a time until well incorporated.  Then add the melted butter, coconut, and vanilla and stir well.

3. In a small bowl, mix the brown sugar, flour, and pecans.

4. Pour the sweet potato mixture into a baking dish.  Sprinkle the topping evenly over the top.  Bake, uncovered, for 25-30 minutes or until the topping is lightly browned.
